Smough relished his title as executioner, so much so that he ground the bones of his victims into his feed. He desired to be a part of Gwyn's Knights, but was rejected due to his apparent gleeful love of his work as an executioner as well as his cannibalistic behavior.

Summary

Executioner Smough was the last knight left to defend the Cathedral of Anor Londo, home of the Gods, after Dragonslayer Ornstein took his eventual leave. Smough was, in fact, a cannibal, grinding the victims of his job of Executioner into his meals. This behavior is what kept him from joining Gwyn's Knights.

A theory as to why Smough was indeed trusted with the protection of the cathedral was that he and Ornstein were somehow undead- making him a useful tool for the Gods, despite his cannibalism.
